LoveIt | Reblochon has an interesting history because it comes from the second milking after the landowner had measured the yield (in other words, this is cheese made from tax evasion). Not available in the US because of the laws concerning the pasteurization of soft and semi-soft cheese, this cheese is used for lots of rich recipes like Tartiflette.
